Million Dollar Fudge, Old Fashioned Fudge

MILLION DOLLAR FUDGE                                      Sherry Rumble

Boil 6 minutes:
4 1/2 c. sugar
Pinch of salt
2 Tbsp, butter or margarine
1 tall can evaporated milk
Put in large bowl:
12 oz. semisweet chocolate bits
12 oz. German sweet chocolate
2 7oz. or 113oz. jar marshmallow
cream
2 c. nuts
2 tsp. vanilla

Pour boiling syrup over ingredients in bowl. Beat until chocolate is all
melted and pour in one very large pan or two or more smaller pans.
Let stand a few hours before cutting. Makes two pans 8x8x2-inch.
Very good a Christmas time.

OLD FASHIONED FUDGE                                  Jo Ann Wimmenauer

2 square, 2oz., unsweetened
  chocolate, in pieces
2 c. sugar
2 Tbsp, light corn syrup
1/8 tsp. salt
2/3 c. milk
2 Tbsp, butter
1 tsp. vanilla
1 c. nutmeats, coarsely chopped
Scald milk. Add chocolate, sugar,syrup and salt. Cook slowly, stirring
until sugar dissolves. Cook to soft ball stage, 238 degrees. Test by
dropping few drops in a cup of cold water. Remove from heat. Add
butter. Cool to lukewarm, 110 degrees without stirring. Add vanilla.
Pour into large bowl. Beat until thick and no longer glossy. Scrape
bowl while beating. Do not beat until too thick. Beat in nuts. If mix­
ture becomes too thick, add 1 Tbsp, milk or cream and beat until
smooth. Spread at once into buttered pan. When firm cut into squares.
