Cherry Coconut Bars, Brownies

CHERRY COCONUT BARS                                 Shari Lynn Shireman

Pastry:
2 c. sifted flour
1 c. butter
6 Tbsp, confectioners
sugar

Filling:
4 eggs, slightly beaten
2 c. sugar
1/2 c. flour
1 tsp. baking powder
1/2 tsp. salt
11/2 c. chopped nuts
1 c. coconut
1 c. maraschino cherries,
quartered

Preheat oven to 350 degrees. With hands mix flour, butter, confection­
ers sugar until smooth. Spread thin with fingers in oblong cake pan.
Bake about 25 minutes. Mix filling ingredients. Spread over top of
baked pastry, no need to cool. Bake about 25 minutes. Cool, cut into
squares and serve as dessert or cut in oblongs and serve as cookies.
Serves 16 for dessert or 40 cookies.

BROWNIES                                                   Leslie Pfeffer

2 squares of unsweetened
   chocolate
1/4 lb. of sweet butter, 1
  stick
2 eggs
1/2 tsp. vanilla
1/4 c. flour
1/4 tsp. salt
1 c. chopped walnuts

First melt chocolate and butter in heavy sauce pan. Remove from heat
and stir in sugar. Add eggs along with vanilla and beat like mad. Stir
in flour, salt and nuts. Now mix all that up. Then you butter a square
tin, 8x8-inches, and dump the whole thing quickly into the pan. Stuff
this pan into a preheated 325 degree oven for 40 minutes. After that,
take out the pan and let it cool for awhile. Then cut into 11/2-inch
squaresLand dive right in.
